Tyana has loved chocolate from a very early age. When she was a toddler, she got into this chocolate syrup and tried drinking it. I caught her in the act and stopped her. So, she devised a new method. When everyone was outside, she poured herself a cupful of syrup and hid under the dining table and drank it as fast as she could. I caught her under the table and took a picture of her with her chocolate mustache and delighted smile! She had managed to drink half a cup before getting caught. I will never forget that face! I am so glad I took a picture.

The recipe is from Marcia Adams’ Heirloom Recipes. It is great on ice cream, in coffee, or straight from a glass. There is no need to buy chocolate syrup when you can make this delicious sauce.

REALLY GOOD CHOCOLATE SAUCE

  • 1 cup light corn syrup
  • 3/4 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 cup hot water
  • 1/8 teaspoon salt
  • 2 tablespoons butter
  • 1/2 teaspoon vanilla extract

Whisk the corn syrup, sugar, cocoa powder, water, and salt together in a medium saucepan. Cook over medium-low heat until the mixture comes to a boil while stirring frequently. Reduce the heat to low and slowly simmer for 10 to 12 minutes without stirring. Remove from the heat and add the butter and vanilla. Transfer the sauce to a mixer bowl and beat for 3 minutes. This will give a smooth texture without graininess. Pour into a jar or container with a tight-fitting lid and store in the refrigerator for a few weeks.

Makes two cups. May be doubled.
