Johnny Cake

This is like a cornbread cake. It is very sweet and delicious. There are many variations of johnnycake, most are more like a pancake. Whatever it should be called, you won’t be sorry to make this. It is so quick and easy too.

JOHNNY CAKE

  • 2 cups flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 cup sugar
  • 1 cup yellow cornmeal
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 1 cup milk
  • 1/2 cup butter, melted

Preheat oven to 350° F. Mix the flour, baking powder, salt, sugar, and cornmeal. Add the beaten eggs, vanilla, and milk, then the melted butter.

Bake in a greased loaf pan (9 x 5 inches) for 45 minutes; or bake in 12 greased muffin cups for 25 to 30 minutes.
